Baked Apples Recipe

submitted by: Tony
  • 1/3 cup of unsweetened apple juice
  • 4 medium size Rome Beauty or Jonathan baking apples
  • 1/3 cup of water
  • 1/3 cup of dry white wine or water
  • 2 tablespoons of grated orange zest
  • Ground cinnamon to taste
  • 1 tablespoon of chopped walnuts
  • 1/4 cup of creme fraiche
  • Peel and core the apples halfway down from the stem end. Preheat oven to 350°F. Using a saucepan or similar over a low heat, simmer the wine, apple juice, and water for 10 minutes. Add the zest and set it aside. Now place the apples in a baking pan just big enough for the apples and the apple juices. Be very generous sprinkling the apples with cinnamon. Now bake, while basting the apples with the apple liquid every 10 minutes until tender. They still need to hold their shape, about 25 to 30 minutes. The apples should be served warm, with 1 tablespoon of the apple juices from the pan. The juices should be spooned into the cored center. Top each serving with 1 tablespoon of creme fraiche and sprinkle with the chopped walnuts.
