Lean Gravy Recipe

Canned reduced-sodium broth can be substituted for the homemade chicken stock, which is unsalted and has fat removed. You may also want to try fat-free chicken, pork, or beef gravy in a can or jar. These gravies are quite good, and the nutrient values are on the label.

  • 1 1/2 cups chicken stock or beef stock, divided, chilled or at room temperature
  • 1 tablespoon finely minced onion
  • 2 teaspoons cornstarch
  • 1/8 teaspoon salt
  • 2 dashes freshly ground pepper
  • In a small saucepan, combine 1 cup of the stock and the onion. Simmer gently until liquid is reduced by one-half. Combine cornstarch with remaining 1/2 cup stock, stirring with a whisk until smooth and well blended. Add mixture gradually to the concentrated stock, stirring constantly. Cook and whisk over medium heat until thickened and smooth. Stir in salt and pepper.

    4 servings (makes 1 cup)
