Lean Gravy Recipe
submitted by: TinaCanned reduced-sodium broth can be substituted for the homemade chicken stock, which is unsalted and has fat removed. You may also want to try fat-free chicken, pork, or beef gravy in a can or jar. These gravies are quite good, and the nutrient values are on the label.
In a small saucepan, combine 1 cup of the stock and the onion. Simmer gently until liquid is reduced by one-half. Combine cornstarch with remaining 1/2 cup stock, stirring with a whisk until smooth and well blended. Add mixture gradually to the concentrated stock, stirring constantly. Cook and whisk over medium heat until thickened and smooth. Stir in salt and pepper.
