Meat Loaf Recipe

  • 1 1/2 pounds 90% lean ground beef
  • 2 slices whole grain bread, finely crumbled
  • 1/2 cup chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup beef broth
  • 1/2 cup egg substitute or 2 eggs
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup catsup or chili sauce
  • Preheat oven to 350°F. Line a shallow baking pan with foil. In a large bowl, combine all ingredients except catsup, mix well with your hands. Turn meat mixture onto foil in pan, and shape it into a loaf 4 1/2 inches wide. 2 1/2 inches high, and 8 inches long. With a knife, make a crisscross pattern across the top. Drizzle catsup across the top. Cover meat loaf with a tent of foil that does not touch the top. Bake 45 minutes. Remove foil cover and bake uncovered another 30 minutes. Remove meat loaf from pan and cool 5 minutes before slicing. If serving hot, slice into 3/4-inch slices. If chilled, cut half as thick and double the number of slices per serving.

    10 servings (makes 1 loaf weighing 1 pound 12 ounces cooked)
    1 serving = 1 3/4-inch slice (almost 3 ounces)
