Turkey Loaf Recipe

  • Olive oil cooking spray
  • 3/4 cup minced onion
  • 3/4 cup minced scallion with some green
  • 1/2 cup minced celery
  • 1/2 cup minced carrot
  • 1/4 cup minced green bell pepper
  • 1/4 cup minced red bell pepper
  • 2 minced garlic cloves
  • 1/2 teaspoon of salt(not needed)
  • 1/4 teaspoon of cayenne pepper to taste
  • 1 teaspoon freshly ground pepper to taste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup evaporated skin milk
  • 1/2 cup low sodium ketchup
  • 2 pounds ground turkey
  • 2 large beaten eggs
  • 2 large egg whites
  • 3/4 cup fine dry bread crumbs
  • Preheat oven to 350°F. On a large nonstick skillet spray some cooking spray. Add the celery, onion, scallion, bell peppers, and garlic. Over a low heat saute until the vegetables are tender and be sure to wait until the liquid is absorbed. It normally take around 10 minutes. Allow to cool and set aside.

    Mix the salt, pepper, nutmeg, cumin, and cayenne. Now add the vegetables. While mixing well stir in the evaporated skim milk, ketchup, egg whites, eggs, turkey, and the bread crumbs.

    Shape into a loaf. Take a shallow baking dish sprayed lightly with cooking spray and bake 45-50 minutes. After taking it out of the oven remove all fat. Let stand for 10 minutes.
