Turkey Loaf Recipe

Preheat oven to 350°F. On a large nonstick skillet spray some cooking spray. Add the celery, onion, scallion, bell peppers, and garlic. Over a low heat saute until the vegetables are tender and be sure to wait until the liquid is absorbed. It normally take around 10 minutes. Allow to cool and set aside.
Mix the salt, pepper, nutmeg, cumin, and cayenne. Now add the vegetables. While mixing well stir in the evaporated skim milk, ketchup, egg whites, eggs, turkey, and the bread crumbs.
Shape into a loaf. Take a shallow baking dish sprayed lightly with cooking spray and bake 45-50 minutes. After taking it out of the oven remove all fat. Let stand for 10 minutes.
